Birch syrup is made from boiled-down birch sap using the same methods for making maple syrup. Close to 160 litres of sap are needed to produce one litre of birch syrup! (Compared to 40 to 1 for maple syrup)
It combines flavors found in caramel, molasses, and has a reminiscent of a balsamic vinegar. It is at its best with salted dishes such as fish, seafood, meat and grilled vegetables.
